Preparation before cooking
- Put the ribs in a hollow dish.
- Sprinkle the coast with thyme, rosemary and pepper.
- Add a drizzle of olive oil.
- Leave to marinate 20-30min.

- Oven method
- Preheat the oven to 200 ° C
- Sear the beef side in a 4min pan on each side (without piercing it with a fork).
- Bake the coast in the oven for 10 minutes (turn the coast 5 minutes from cooking).
- Exit and let stand 8-10 minutes
- Cut the meat into slices of 1cm then salt with the fleur de sel.
- Serve with a small green salad and vegetables for example.
- Barbecue method
- Place the coast on the barbecue about 8 cm above the embers.
- Cook the meat for about 5 min on each side to get it bleeding. (extend the cooking time for a few mins for a point meat, and more for well -cooked meat).
- Cut the meat into slices of 1cm then salt with the fleur de sel.
- Serve with a small green salad and vegetables for example.
