Pancetta and tomato risotto (for 4 people)
Coriander, with slightly citrus flavor (lemon-orange), is an ingredient too often ignored because sometimes the victim of the belief that it is difficult to incorporate into your dishes. More concerns, the Cabri d'Or offers you this little risotto!

Preparation of the garnish
- Brown the pancetta then cut it into pieces.
- Cut the cheese into cubes.
- Cut the tomatoes into small pieces.
- Add organic coriander previously ground by a pepper mill (walks very well). Or else, you can roast it and therefore heat the seeds in the pan or in the oven then mix them with a mixer (or in the pestle).
- Little tip: you can also add Provence herbs.
- Boil 1L of water with a cube of vegetable broth.
- Add the cut onion and a drizzle of oil in a saucepan. Add the white wine.
- Add a ladle of broth. Reduce. Repeat the operation until the end of the broth.
- Once finished, add the parmesan and the butter
- Serve the rice and add the garnish.
Health
The coriander is stimulating and can be euphoric at a large dose. It is known for its digestive and indicated virtues for digestive disorders due to its antibacterial action.
